Mac n' Cheese Upgrade

So this isn't my usual dana-lectable, but it is baked! I had a sample in the food store the other day of Grilled Gouda with Roasted Red Pepper - what a sophisticated combo, right?  I had to buy some Gouda after that, so I thought instead of sandwiches, why not bake up a cozy mac n' cheese using  some Gouda and RRP? Quite easy, I must say.

1 box of pasta (I used whole wheat spirals)
3/4 to 1 lb. of grated gouda (the cheesier the better!)
1 tbsp. butter
1 onion
1/2 jar of roasted red peppers (use as much to your taste), chopped
2-3 cloves are garlic
2 tbsp flour
1 cup of vegetable broth
1/2 cup of light cream (don't be afraid to use 1 1/2 cups of milk)
Bread Crumbs
Salt, Pepper, White Pepper

  • Cook pasta according to directions on box, drain, set aside
  • Melt butter in pot, add onions and garlic, saute until soft
  • Add flour and gradually add liquid. This will become a thick roux
  • Stir in grated cheese and roasted red peppers, add seasoning
  • Add cooked pasta to cheese mixture, stir until combined and gooey - add more seasoning if you like
  • Transfer mac n' cheese to a greased baking dish - top with bread crumbs
  • Bake at 350 degrees for 20-25 minutes or until bubbly!
